Another Sunday in Mikaville

Marination Station in full effect. Gizzards and Ribs. Sweet Potatoes prepped to be roasted.. was the start of my Sunday.
My version of baking
Savory Roasted Sweet Potatoes with Cream Cheese topping
What I did was slice the sweet potato then made a wash with seasoning and 2tbsp of oil. I like savory more than sweet so I used basil, garlic, salt and lemon pepper. Roasted at 365 for 40min. Topping is cream cheese and butter softened then whipped. Add brown sugar, cinnamon and vanilla. Then whipped again until smooth

Bacon cheeseburger Pizza remix

I have bragged before about dominos delivery options. Easy fast and delicious. Now I'm going to show you how to take a bacon cheese burger pizza and remix it!
Use pickle relish or pickles if you don't have relish, mustard and ranch dressing. Combine equal parts of mustard and ranch dressing. Mix well. Then cut your pickles into a relish.
Now what you're going to do is use the mustard and ranch dressing mix as a sauce and then top your pizza with the pickle relish. Deeelicious

Barbacoa

Pork Neck Bones are very inexpensive and great when the wallet is on empty, like mine is lately.

I slow cooked them. You can use a crock pot set on low. Great thing about that is,  the main focus of your meal will be cooked by the time you get home from work. 

Seasoned neck bones with

Red Pepper Flakes, Cumin, Garlic Salt, Oregano, Chili Powder and 2 garlic cloves. Cover with water.

Once the meat was cooked, I moved it into a baking pan added more garlic cloves and half of a finely chopped onion. Bake on 400 for 15 minutes then let it cool. Save your broth.

This is the only part of the recipe that take time. You need to separate the meat from all bones. There will be a few little bones so take your time.  Then shred the meat. I use the 2 forks method. 

Once meat is shredded, add it back to the broth in your crock pot. That's all she wrote. 

Add which ever toppings you desire. To make my tacos budget conscious I use an inexpensive bagged baby spinach/arugula mix and the other half of my onion with some salsa that I had previously purchased.

OLD ITEM/NEW USE

Have you ever tried to make chicken soup or even boil chicken just to get the broth... I have and I hate the fact that I get that white foam everytime I try to boil chicken.

So how many of you have tried to have coffee in a French press? I myself am not a coffee drinker but the experience of a French press is something that I really like.

Which leads me to my first installment of OLD ITEM/NEW USE. When you boil your chicken and you have that foam, what I do is I pour my broth into a French press!
