The struggle

I was laid off back in July. I have been struggling financially but I didn't stop my education. By the end of the semester I will have my Associate degree. I am doing this as a single mother and I am determined to get over this hill. Next month I will begin substitute teaching but for now, like many other Americans my finances are affecting my life. Including this blog. Can't afford to cook for about a week so don't think I disappeared. I'll be back *Arnold Schwarzenegger voice*

Avocados

Being from New Mexico we eat a lot of avocados. By the time you're six, you know how to shell it, scoop it and slice it. And by the time you're 10, you know how to make a great margarita but that's neither here nor there. ;) I found this great tool at Walmart for all you non New Mexicans.... Asian Chicken Wraps

Here is a new recipe that I made up the other night. bonus is I am going to use the left overs tonight to eat again and my daughter loved it.
lime seasoning/sauce, fish sauce, oyster sauce, soy sauce, sriracha, sweet chili sauce, teriyaki sauce


ground ginger, curry powder, garlic salt

mushrooms, bok choy, garlic, cilantro

peanut butter, sesame oil, coconut

chicken breast
Now step by step directions with photos:)



Cut the stems off the leaves of bok choy. I used 3 heads of baby bok choy.
Dice the stems of the bok choy and save for filling of the wraps.
Place the leaves in a steamer or pot to steam. Only for about 3 minutes.
 My steamer was a gift from my mother. It is also a rice cooker. Great kitchen item by Oster.










 Cut up all of the veggies
Cilantro about a handful and include the stems
Mushrooms I used about 10 you can add more if you like
Garlic I used 3 cloves, you can use more


CHICKEN about a pound
I thinly sliced the chicken breast












Now for the cooking portion




Add about 3 tablespoons of Sesame oil to a hot pot, Once the oil warms up add your chicken.
When the chicken is nearly cooked all the way through add 2 tablespoons of peanut butter, garlic salt, curry powder and ground ginger
Let the chicken get fully cooked and coated with the sauce.
NEXT
Add one tablespoons of each of the fish sauce, oyster sauce, teriyaki, lime sauce and soy sauce


Let the chicken simmer, then add the veggies and one teaspoon of the 
sriracha and the sweet chili sauce


Lastly add a handful of coconut
(shredded, about 1/4 cup)


Once the ingredients simmer (for about 8 minutes). You can begin to plate your meal

Brunch

Decided to eat brunch today. Getting older so trying to take a healthier approach. Only 6 ingredients
Honey wheat (toasted)
Spinach leaves
1 fried egg
Leftover steak (sliced)
Onion (sliced)
Balsamic Vinegar
And lately my daughter and I have enjoyed v8 splash tropical orange. Which is great cuz it has a serving of fruit and vegetables with every glass. And my 2 year old loves it!

Hawaiian Swai Fillets

My sister had a couple of brown bananas hanging out in her refrigerator so I decided to make a meal out of them. I had 3 Swai fillets, some bell peppers and bananas. What I did was warmed up a frying pan put about 2 tablespoons canola oil in there. Once the oil what's hot I added the fillets, I seasoned one side with a garlic salt mix. Let them cook for about 3 minutes and flip, I seasoned the other side with a lemon pepper mix. Let that side cook for about 3 minutes and remove from the pan. In the same pan I added one more tablespoon of canola oil. To that I added slice bell peppers and let them brown, then added my sliced bananas. After about 6 minutes my peppers and bananas were ready to plate. I had some yellow rice leftover from making those sweet Thai chicken wings. Below are the photos. Enjoy Peeps
