Cinco de Mayo

Growing up in New Mexico, Cinco De Mayo was always celebrated. My friends and I have an ongoing joke about how I learned to mix margaritas at age 5. Lol I can still make a mean margarita.
This year my seester and I celebrated with the beers of Mexico, tacos and ceviche. In fact we kept it going into Seis De Mayo. :)
There are 2 types of meat that I prepared. Carnitas- beef, cilantro, onion, tomatoes
El Pastor- pork, pineapple, jalapeño
Toppings- cilantro, onion, radish, romaine, avocado
If you have never tried radish on your tacos.. I highly recommend it.
I prepared the ceviche and let it sit in the fridge overnight
Swai fillets, shrimp, cilantro, garlic, onion, tomato, jalapeño, lime juice
I like to use mayo on my tostadas, my seester taught me that flavor booster.

Super Bowl

The game wasn't eventful but my kitchen was. Football is a huge part of my life. And now that its gone, I decided to give up beer and liquor. I will only be drinking wines.. a huge variety of them lol... from now until next nfl season.
What did you make your peeps this Super Bowl Sunday?
Congrats Seahawks and Seahawks fans

Barbacoa

Pork Neck Bones are very inexpensive and great when the wallet is on empty, like mine is lately.

I slow cooked them. You can use a crock pot set on low. Great thing about that is,  the main focus of your meal will be cooked by the time you get home from work.

Seasoned neck bones with

Red Pepper Flakes, Cumin, Garlic Salt, Oregano, Chili Powder and 2 garlic cloves. Cover with water.

Once the meat was cooked, I moved it into a baking pan added more garlic cloves and half of a finely chopped onion. Bake on 400 for 15 minutes then let it cool. Save your broth.

This is the only part of the recipe that take time. You need to separate the meat from all bones. There will be a few little bones so take your time.  Then shred the meat. I use the 2 forks method.

Once meat is shredded, add it back to the broth in your crock pot. That's all she wrote.

Add which ever toppings you desire. To make my tacos budget conscious I use an inexpensive bagged baby spinach/arugula mix and the other half of my onion with some salsa that I had previously purchased.

Enjoy Peeps XOXO

Avocados

Being from New Mexico we eat a lot of avocados. By the time you're six, you know how to shell it, scoop it and slice it. And by the time you're 10, you know how to make a great margarita but that's neither here nor there. ;) I found this great tool at Walmart for all you non New Mexicans.... Enjoy and if you happen to use it let me know how it goes. Love you peeps xoxo
