I went with a healthy meal tonight. Shockingly my 3yr old daughter even ate the okra.
I used Mahatma jasmine rice which was of course steamed in my Oster Rice Cooker. Then I steamed my frozen okra in coconut milk. I suppose this is the reason my daughter enjoyed it. My chicken drumettes were marinated in salt and pepper and a little garlic salt overnight.
Today I added cajun seasoning and curry powder. I sliced half a jalapeño, an onion and 3 gloves of garlic then mixed them with my drumettes. I baked the chicken on 350° for and hour without covering it.
