Barbacoa Tacos

Barbacoa

Pork Neck Bones are very inexpensive and great when the wallet is on empty, like mine is lately.

I slow cooked them. You can use a crock pot set on low. Great thing about that is,  the main focus of your meal will be cooked by the time you get home from work. 

Seasoned neck bones with

Red Pepper Flakes, Cumin, Garlic Salt, Oregano, Chili Powder and 2 garlic cloves. Cover with water.

Once the meat was cooked, I moved it into a baking pan added more garlic cloves and half of a finely chopped onion. Bake on 400 for 15 minutes then let it cool. Save your broth.

This is the only part of the recipe that take time. You need to separate the meat from all bones. There will be a few little bones so take your time.  Then shred the meat. I use the 2 forks method. 

Once meat is shredded, add it back to the broth in your crock pot. That's all she wrote. 

Add which ever toppings you desire. To make my tacos budget conscious I use an inexpensive bagged baby spinach/arugula mix and the other half of my onion with some salsa that I had previously purchased.
